Prime Rib


Ingredients:

10 pound expensive roast
(Standing Rib / Prime Rib)


Directions:

Important! Bring the meat to room temperature - about 2 hours.

Preheat oven to 450F
Place roast fat side up in roasting pan
Sear for 20 minutes
Turn oven down to 325F
Cook for 13-15 minutes per pound or until internal temperature is between 120F and 125F
If not done, return to oven for 10 minute intervals.
Let stand 30 minutes!
Temperature will rise about 10 degrees while standing.
The center of the roast will be a gorgeous "medium rare", while the outsides will be closer to "well done".


Notes:

Afraid to cook an expensive cut of meat? Don't be with this NO FAIL recipe. A few things to keep in mind. Always bring the meat to room temperature. Never season an expensive piece of meat with salt. Depending upon how much fat is on the meat, be prepared for some smoke pouring out of your oven. Always let the meat rest 1/2 hour before slicing. I've been doing this recipe for years and always get rave reviews!
