Country Swiss Steak


Ingredients:

1 pound boneless beef round steak, cut 3/4 to 1 inch thick
1 Tablespoon cooking oil
1 small onion, sliced and separated into rings
2 Tablespoons quick-cooking tapioca
1 Teaspoon dried thyme, crushed
1/4 teaspoon salt
1/4 teaspoon ground black pepper
1 -14oz can chunky tomatoes with garlic and spices (some brands call it Italian-style seasoning)


Directions:

1) Trim fat from meat. Cut meat into serving-size pieces. In a large skillet, brown meat on all sides in hot oil. Drain fat.

2) Place onion in 3.5 - 4 qt slow cooker. Sprinkle onion with tapioca, thyme, salt, and pepper. Pour tomatoes over onion. Add meat on top.

3) Cover and cook on low-heat setting for 10-12 hours or on high-heat setting for 5-6 hours.


Notes:

I like to serve this with hot mashed potatoes or No Yolks Egg noodles.
