Ingredients:
4 pieces of bacon, sliced into pieces (Omit
for vegetarian recipe)
1.5L of dried Navy beans
45 mL lard
675g fancy molasses
500 mL ketchup
125 mL lard
15 mL dry mustard
Directions:
Wash beans and remove any bad ones.
Put beans in a 6L Dutch oven or heavy
roaster. Cover with lukewarm water to a depth of 10-13 cm above the beans.
Soak overnight.
In the morning add 45 mL of lard and boil beans for an hour
or more. Beans are done when they begin to split, or bite one to check.
Remove from heat.
Add molasses, ketchup, 125 mL lard and mustard.
Mix
gently, the mixture should be sloppy.
Add sliced bacon pieces.
Put beans in
the oven and bake, uncovered, at 200C (400F) for 1 hour. Reduce heat to
140-150C (275-300F) and bake for 3-4 hours longer. Cover the beans after
they brown. Baking will reduce the water so you might have to add more water
or tomato juice.
Also taste for salt and pepper.
Serves 16-18. Freezes
great.

This is my all-time favorite recipe. I do
this about once a month and freeze vast quantities, but they never seem to
last. :)
