Paula's Caramelnut Muffins


Ingredients:

1 cup brown sugar
75g butter
1 cup toasted walnut pieces (can use other nuts)
1 tsp ground cinnamon
2 cups flour
3 tsps baking powder
1/2 cup white sugar
2 eggs
1/4 cup vegetable oil
1/2 cup fresh orange juice (sieved)


Directions:

Place brown sugar and butter in a saucepan and stir over a medium heat till combined. Stir in walnuts and cinnamon.
Sift flour and baking powder into a bowl.
Beat sugar, eggs, oil and orange juice together.
Make a well in dry ingredients and pour in egg mixture.
Mix gently and quickly to combine, add nut mixture and stir gently just to combine.
Don't over stir.

Fill paper cup-lined muffin tins two thirds of the way -
Bake at 200 degrees celsius for 15 minutes
