Amy's Cheese & Garlic Grits

Ingredients:
4 C. water
1 C. grits (reg. or quick cooking)
1 tsp. salt
3/4 stick butter
8 oz. Sharp Cheddar Cheese
1 tsp. Worcestershire sauce
1 1/2 tsp. garlic powder (5 or 6 cloves pressed)
1/2 tsp. Tabasco sauce (I use more!)
1/2 tsp. celery seeds (1 stalk celery chopped very fine)
2 eggs (beaten)
Directions:
In a 2 qt. sauce pan, bring water to a boil,
reduce heat, add grits & cook according to directions on package. (grits
splatter so stir frequently & use a lid)
Remove from heat, add remaining ingredients (eggs last), & mix well.
Pour into a greased 2 qt. casserole dish & bake in a slow oven (250 degrees
F.) for 1 hour, or until crust starts to brown slightly.
Notes:
A Christmas morning tradition in our house,
this dish is also very good the next day sliced & served on toast.
FAQ: What are grits?
Grits are a kind of meal made from corn kernels that have been dried & soaked in
soda & lye to remove the kernel & germ. What's left is like the white part you
see in pop corn. Largely available in the Southern United States.
