Plum Bread


Ingredients:

Per Loaf...
8 oz mixed dried fruit
4 oz margarine
1 cup of sugar
1 cup of water
2 cups of self-raising flour
1 egg


Directions:

Put fruit, sugar, water and margarine into a saucepan and heat until margarine is melted. Separate the fruit from the juice.

Beat the egg into the mixing bowl and mix in the fruit. Stir, or fold, in the flour and juice alternately until you have a sloppy mixture.

Put mixture into a greased or lined 2lb loaf tin and bake in the centre of a pre heated oven for 1 1/2 hours on gas mark 2.


Notes:

I don't usually use all of the juice so this doesn't make the bread too wet but it's a personal preference here.
