Jay's Basic Homemade Tomato Sauce


Ingredients:

2 Kgs of fresh Tomatoes
1 Large white onion
6 cloves garlic
4 bay leaves
1 tbsp italian seasoning or just basil and parsley
2 pints of Chicken Stock
1 tsp of salt
1 tsp of ground black pepper


Directions:

Score tomatoes and flash boil in water for 1 minute quickly adding to ice cold water. The skins should fall off the tomatoes.

Saute Onions in large stock pot with salt, pepper and garlic until soft and translucent. Add peeled tomatoes, chicken stock, bay leaves and let simmer for minimum 2 hours 3 is best In the last 15 minutes add remaining seasoning


Notes:

We make this recipe every couple of weeks and it serves as the basis for anything italian, including spaghetti, my homemade meatballs and my lasagna. It freezes extremly well. Separate into ziplock style containers for 1 or 2 people.
